The Secret of Making a Scrumptious Taco Soup (+ 2 Recipes)

Taco soup is loaded with vegetables and it’s famous worldwide for its absolutely scrumptious flavor combo. While you’re always better off eating a low calorie soup, taco soup is still a tasty option. Moreover, any variety of taco soup is sure to make your entire family happy. Taco soup is rich in protein and fiber, which makes it a perfect dinner choice. There’s a slight difference between an ordinary taco soup and a slow cooker taco soup, so here are two recipes to try and pick your favorite one:

Taco Soup Recipe

This one is a famous recipe that many people use, albeit you can experiment with ingredients and add your favorite ones or remove those you dislike. The choice is yours. If you don’t have ranch salad dressing mix or taco seasoning mix, you can use any seasoning you have handy like dried parsley, garlic powder, ground black pepper, salt, or/and onion powder.
Ingredients:
  • 1-1/2 cups water
  • 2 pounds ground beef or ground turkey
  • 1 can pink kidney beans
  • 2 cans pinto beans
  • 1 can whole kernel corn, drained
  • 2 cups diced onions
  • 1 can stewed tomatoes (I use Mexican-style)
  • 1 can tomatoes with chilies
  • 1 can tomatoes, diced
  • 2 cans green chilies, diced
  • 1/2 cup green olives, drained and sliced
  • 1/2 cup black olives, drained and sliced
  • 1 oz. package ranch salad dressing mix
  • 1 package taco seasoning mix
Directions:
In a large pan, cook the ground beef and onions until lightly browned. Drain to remove excess fat and return to the pan. Add all the ingredients from the list, breaking up all tomatoes with fork or spoon, to the pan. Stir well, bring to boil, reduce heat to medium-low and simmer for about 15-25 minutes, stirring occasionally. Serve with corn chips, sour cream or grated cheese.

Slow Cooker Taco Soup Recipe

If you are a huge fan of slow cooker recipes, here’s a taco soup recipe to try right now so that you have a delicious dinner with little to no efforts. I use my slow cooker rarely so the first recipe is my favorite, yet sometimes slow cooker taco soup is my safe bet. Slow cooker taco soup takes a lot of time to make, though the taste is a bit better than an ordinary taco soup.
Ingredients:
  • 2 pounds ground beef or ground turkey
  • 1 small onion, chopped
  • 3 cups fresh tomatoes, finely chopped (or a can crushed tomatoes)
  • 2 cups frozen corn
  • 2 cups red kidney beans
  • 2 cups black beans
  • 1 oz. package ranch salad dressing mix
  • 1 package taco seasoning mix
Directions:
Brown meat and onions in a large pan. Drain the fat and place in your slow cooker. Add remaining ingredients and cook on low for 5-6 hours. Serve with whatever you and your family love – be it corn chips, a slice of rye bread, grated cheese or sour cream. Easy to make, but long to cook.
If you are a vegetarian, you can still make taco soup. Simply remove meat from the ingredient list and cook as usual. The vegetarian version of taco soup is super delicious as well.
