When grilled, zucchini boasts natural sweetness, making it an amazing snack to eat on the go. An added bonus: grilled zucchini is very low in calories.

2. Eggplant

One of the most underrated vegetables and one of the best replacements to meat, eggplants are slightly savory and amazingly meaty, when grilled. They are a fabulous source of potassium, magnesium, vitamin B6, fiber, protein, and vitamin C, and are relatively low in calories. Plus, they are easy to grill.

3. Mushrooms

With a great variety of edible mushrooms out there, you can never go wrong with the grilled ones. Most types, especially Portobello or cremini, make an amazing replacement for meat. They are filling, healthy, meaty, earthy, and rich in unique flavor that doubles when grilling. Use grilled mushrooms in vegan burgers, kabobs, on toasts, or in salads.

4. Onions

Onion, especially a red variety, is another yummy veggie for grilling that many people skip. Onions help to strengthen your immunity, which tends to be weak when the spring season comes. Add grilled onions to your salads or use them in vegan kabobs and burgers for a sweet and hearty taste.

5. Bell peppers

One sweet potato provides your body with 368% of recommended daily vitamin A intake, not to mention that it is an excellent source of potassium, dietary fiber, and protein.

7. Tomatoes

Though technically a fruit, any kind of tomato can be grilled and used in your favorite meals, or even eaten alone or with other grilled veggies. Drizzle the olive oil or balsamic vinegar over the cut sides of your tomatoes – opt for heirloom, plum, or beefsteak tomatoes – and sprinkle with salt, garlic, black pepper, or thyme. Place them, cut sides up, on the preheated grill, and grill for about 3 to 5 minutes, or until the tomatoes start to show the beautiful grill marks.
